Easy Honey Mustard Dressing – Weight Watchers 2 Points.
My daughter wants to go vegetarian. Which, in and of itself, is fine. However …
She’s a challenge to cook for even when meat is involved. She has a limited palette. Very limited.
I mean, she’s only just discovered the joy that is pizza. Pizza, people! She shunned it all through her childhood and now regrets all those pizza parties where she turned her back on those slices of deliciousness!
Then add in her desire to shed a few pounds.
Oh, and she only likes a handful of vegetables.
Plus she has adamantly said no to tofu.
Suddenly this whole eating (and for me cooking) vegetarian has become that much more challenging.
Sigh.
So now is the point where I ask for any and all recommendations for the most boring and bland and low-fat, low-carb vegetarian meal ideas. Fish and eggs are fair game.
Easy to prepare is a plus for mom. 😉
In the meanwhile, I see a lot of salads in my future. So I decided to whip up a super easy honey mustard dressing to, well, dress up all those future salads …
Easy Honey Mustard Dressing
2 Weight Watchers Points
Makes 16 servings | Serving size: 1 tablespoon
Ingredients
1/4 cup dijon mustard
1/4 cup honey
1/4 cup apple cider vinegar
1/4 extra virgin olive oil
Combine all ingredients in mason jar. Cover and shake. Store at room temperature. That’s it!

Your a brave woman Linda. I have a teenager who for years has wanted to go vegetarian. (Strange choice, since bacon is her favourite food) As she doesn’t eat any of the things that are needed for vegetarians to stay healthy and is a person who needs protein, I always refused her request. I regularly cook for 6 to 8 people. I don’t have the time or the energy to cater to her, when I know she won’t eat what’s required.
In my experience, kids who are raised vegetarian, eat what’s needed. Kids who choice vegetarian as teenagers, don’t, and are ultimately are advised by a doctor to go back to eating meat. Sorry I don’t mean to sound cynical and I’m sincere when I say Good luck.

I truly appreciate your honesty! And I too have been resisting her vegetarian request for years now. I’ve only conceded because I’m not a huge meat eater and thought I could try to come up with some high protein options for both of us. Plus, with my son busy with evening college classes this summer, I’m really only cooking dinner during the week for my daughter and I – which makes it that much easier. I’m with you about the whole catering to one. I also fear her motivation to be vegetarian has nothing to do with her not liking meat or concern for animals and more thinking that it would mean losing weight. Though there are much easier ways to do that if she would only listen to me. Sigh. Teenager girls!

I’m totally a meat eater, but I love salads with some boiled shrimp thrown in for protein. Also when low carbing I enjoy egg salad often as well as celery sticks with peanut butter and chunks of cheddar cheese, and don’t forget omelettes! Make them with cheese and the veggies she likes! I load an omelet up and it gives me 2 meals.
Will say doing vegetarian, low carb AND low fat is a tough one. I’ll stick with low carb meat eater. Blood tests routinely show lowered lipids and trics!

Thanks for the ideas! I will absolutely have to add some omelettes into our dinner routine (I just love breakfast for dinner!). And peanut butter on celery sticks is another great one. We are definitely looking for protein suggestions and you have given me some great ideas! 🙂

I just discovered your website, and I’m anxious to try this dressing! I have 2 questions though:
You say 1/4 olive oil; is that 1/4 cup?
You say it’s 2 WW points; is that smart points? Is a serving 2 tablespoons?
I guess I actually had 3 questions ?

Yes, it’s 1/4 cup of olive oil. Extra Virgin Olive Oil to keep the WW points down. It’s 2 WW Smart Points and the serving is 1 TBS.
